Halwa
BEETROOT HALWA SOUTH INDIAN
This Beetroot Halwa is deliciously prepared from the beetroot & made healthy without any added colour.
SERVES 10
INGREDIENTS

350g Carrot
-
650g Beetroot
-
2 tablespoon Whole wheat flour (called chapati flour or Atta)
-
1 tsp Vanilla essence
-
5 tablespoon of Corn Flour
-
5 tablespoon of Ghee
-
1/4 tsp Salt
-
Pistachios, cashews, almonds & black raisins as required
-
4-5 Cardamom crushed
-
350g Sugar

How to Make Beetroot Halwa South Indian Kerala Style
STEP 1

Wash & peel Carrot & Beetroot

Blend with 450ml of water & strain the juice
STEP 2

Add 2 tbsp of whole wheat flour called chapati flour (atta).

Add 5 tbsp of cornflour.

Add 1 tsp of vanilla essence
-
Add 1/4 tsp of Salt.
-
Whisk & keep aside.
STEP 3
-
Take a pan & add sugar 350g.
-
200ml of water.
-
Boil & dissolves sugar (1-2 minutes) & keep aside.
STEP 4

Take a big pan & add 3 tbsp of ghee or Clarified butter.
-
Add black raisins, after 30 seconds
-
Add sugar syrup and boil foe 1-2 minutes.

Add the carrot & beetroot mixture & stir continuously.
-
(maintain low heat and stir for 5minutes & then maintain medium heat and stir for 25-35 minutes).

Add cardamom powder.

When the mixture starts thickens add some chopped nuts and raisins.

When the mixture starts separates from pan add 1 tbsp of Ghee.
-
And another teaspoon ghee just before removing from the heat. And transfer to a glass tray.

(oven safe need to tolerate heat) as hot.
STEP 5

Apply ghee to the setting tray.

Add nuts to the bottom of the glass (oven safe)tray.
-
Transfer it & set to cool for 1-2 hours at room temperature.
