Chicken
Tikka Masala

INGREDIENTS
STEP 1

300-1000g of Chicken Breast
-
4 tbsp Natural Yogurt OR Dahi OR Curd OR Katta Thayiru
-
2 tsp of Garlic Paste
-
1 tsp of Salt
-
2 tsp of Kashmiri Chilli Paste ( Mild) OR 2 tsp of Kashmiri Chilli Powder( Mild)

1/2 tsp of Red Chilli Powder (Spicy)
-
1 tsp of Turmeric Powder
-
1 tsp of Coriander Powder
-
1 tbsp of Olive Oil OR Cooking Oil
STEP 2

3 tbsp of Olive Oil OR Cooking Oil
-
1 tbsp of Butter
STEP 3
-
No ingredients required
-
150-200ml of fresh cream (here I used double cream)
-
1 tbsp of Fenugreek leaves.

2-3 tbsp of Olive Oil OR Cooking Oil

1 Green Chilli
-
2 Large Onion thin and small chopped
-
1 tbsp Ginger crushed / Paste
-
1 tsp Salt
-
1 Nutmeg
-
1 Cinnamon Stick
-
4 Large Tomatoes thin and small chopped
-
3 tsp of Garlic Paste
-
2 tbsp of Tomato Puree
-
1 tsp of Red Chilli Powder (Spicy)
-
1 tsp of Coriander Powder
-
1/2 tsp of Garam Masala
-
1/2 tsp Turmeric Powder
-
3 tsp of Kashmiri Chilli Paste (mild) OR 3 tsp of Kashmiri Chilli Powder (Mild)

1 tbsp of Lemon Juice
-
Water as it say on video or as required
-
3-4 tbsp of Coriander leaves
-
150-200ml of fresh cream (here I used double cream)

1 tbsp of Fenugreek leaves.
HOW TO COOK THIS DELICIOUS CHICKEN TIKKA MASALA
STEP 1

Mix all the step 1 ingredients together.

Marinate for 30 minutes to 1 hour
STEP 2

In a pan add oil and butter. Maintain medium to high flame.

Fry the marinated chicken for 7-10 minutes.

Flip every 2 minutes. ( watch the video below for perfection )

After 8 minutes transfer to a plate and keep aside.
STEP 3

Use a mesh grill OR an oil pot strainer over the gas hob. This method gives a nice smoke flavour to the curry which is something special for this chicken tikka masala. OR use a skewer to attach chicken pieces and smoke over the gas hob for 1-2 minutes and then separate the chicken from the skewer.

Fried chicken pieces smoke for 1-2 minutes. ( watch the video below, for better understanding of this step)

Flip every 30 seconds.

Smoked chicken keep aside.
STEP 4

Heat a pan and add the oil. Maintain medium to high flame.

Add a green chilli, onion, ginger,salt, nutmeg, cinnamon stick.

Stir onion and other ingredients added, until it is soft and golden brown.

Once it is golden brown add tomatoes chopped. Stir again another 3 minutes until it is soft.

Add garlic paste and tomato puree.

Stir for another 2 minutes.

Now add the spices including red chilli powder, coriander powder, garam masala, cumin powder turmeric powder and kashmiri chilli powder(paste).

Mix well.

Add the lemon juice and stir for 1 minute.

Add water as required ( please check the video recipe below)

Bring the gravy to boil

Once the gravy starts to boil add the smoked chicken pieces.

Cover and cook for 10 minutes.

Maintain medium to high flame.
-
After 10 minutes, Take the lid out and cook another 10-15 minutes until the water evaporates to half.

Then bring to high flame and add 3-4 tbsp of finely chopped coriander leaves.

Mix well. If any masala with yogurt left out from marinated chicken also can add to the curry. It is not neccessary, but surely will add more taste.

Check the salt level. If required add 1/2 tsp of salt.

Add the fresh cream, stir and cook until the desired consistency reaches. Finally add the fenugreek leaves.

The delicious chicken tikka curry is ready.
**Here I added 150-200ml of fresh cream for extra taste. However, if require you can reduce the amount of fresh cream to 50-100ml without compromising the taste.
**This curry can serve to 3-6 people depending on the quantity of chicken and fresh cream used.
