Cucumber

Serves 1

This delicious Cucumber Raita can be made in five minutes and can serve with Biryani & spicy dishes.

 

INGREDIENTS 

4 tablespoons natural yoghurt  

4 tablespoon Cucumber 

2 tablespoon Coriander leaves 

1/2 of one small Green chilli (optional only)

1 tablespoon Olive oil 

1/4 th teaspoon Salt

7-10 Curry leaves 

INSTRUCTIONS

1 Take a bowl and add 4 tablespoons natural yoghurt. Whisk and add 1/4th teaspoon of Salt and whisk again.

 

2 Add 4 tablespoon of Cucumber, 2 tablespoons of Coriander leaves.  

 

3 Also if you like chilli add 1/2 of one chilli chopped as shown in the video. But it is not necessary if you serve with spicy dishes. Mix everything with a spoon and keep aside. 

 

4 Heat the pan on medium heat and add 1tablespoon of Olive oil. 

 

5 Once the oil is hot add 1/2 teaspoon of mustard seeds. Let it sizzles for 20 seconds. Add 7- 10 curry leaves after 10 seconds turn off the heat.

 

6 Add the curry leaves and oil to the mixed cucumber. 

 

Enjoy with spicy dishes or you can have it itself. 

 

**Can keep in the fridge for later if you tightly cover it with a cling film.
