CRISPY PLAIN DOSA

This delicious crispy dosa is a family favourite recipe. Start your day with this yummy dosa goes well with sambhar and coconut chutney.

SERVES 5

Can Serve with sambhar , coconut chutney& coriander chutney.

 

STEP 1

INGREDIENTS 

  • 2 bowl :Raw Rice (called idli rice or dosa rice)

  • 1 bowl : Urid Dal ( uzhunnu parippu in malayalam)

  • 1/4 bowl: Channa dal (split chickpeas) 

  • 1 tbsp : Fenugreek seeds (uluva in malayalam)

  •  1/2 tsp : Salt (as required)

  •  1/4 bowl: Olive oil or any cooking oil (as required)

How to Make Dosa 

STEP 1

 

1  Take a high bowl.  Add all step 1 ingredients (rice, urid dal, chana dal, fenugreek seeds).

 

2 Add water to the bowl in double height of the contents.

 

3 Soak for 5 hours.

 

4 After 5 hours , the contents in the bowl needs to wash & rinse 3-4 times.

 

5 Add the rice and other contents to a grinder or mixer.

 

6 Add water to the level of rice. (If required add extra water. Batter cannot be too watery. So just add to the level of rice.) **If you need very crispy dosa ,then leave some grain of rice when you make the batter. Means do not make too smooth batter. If you like soft dosa make a smooth batter.

 

7 Add the batter to a bowl and allow to ferment overnight ( minimum 10 hours )

 

 

STEP 2

In the morning add 1/2 tsp of salt (as required)to the batter and mix well.

 

1 Take a Chapati Pan or dosa maker pan (*non-stick or iron pan better) and maintain medium heat to get the pan hot.

2 Once the pan is hot, sprinkle water on the pan and also maintain low heat by bringing the flame down.

 

3 Add 2 laddle of batter to the low heated pan and by using the back of the laddle spread the batter from centre to outwards by using a clockwise movement.**( watch the video below)

 

4 Once flatten cover with a lid for 15 seconds and bring back the medium flame.

 

5 After 15 seconds take the lid out and sprinkle some oil at the edges and centre.

 

6 Once the inside is cooked, separate the edges using a wooden spatula . Once the back of the dosa get golden colour. fold it in your favourite shape. Watch the video below.

 

Serve with any vegetable curry or coconut chutney.
