This delicious Egg Curry is authentically made with an optional to  have the taste of the coconut milk or fresh milk. Both work well with other ingredients to give two differently tastes recipes. Serve with rice, chapati, poori, dosa or appam.

Egg Curry

 

SERVES 4-5

 

STEP 1

INGREDIENTS 

  • 5 Boiled Eggs

  • 1/2 tsp Salt

  • 1/2 tsp Turmeric powder

  • 1/2 tsp Kashmiri Chilli Powder (mild)

  • 1/2 tsp Red Chilli Powder (spicy)

  • 1 tbsp Olive oil /Cooking oil

  • 2-3 tbsp Olive oil/ Cooking oil

  • 3 Large Onion

  • 2 Large Tomatoes

  • 1 Tbsp Garlic chopped

  • 1 Tbsp Ginger Chopped

  • 1-2 Bay Leaves

  • 1 piece Cinnamon Stick

  • 2 Cardamom

  • 8-10 Curry leaves

  • 1 tsp Tomato puree

  • 1 Green Chilli

  • 3/4 (three quarter) tsp Turmeric Powder

  • 2 tsp Kashmiri Chilli Powder(Mild)

  • 1/2 tsp Coriander Powder

  • 1/2 tsp Red Chilli Powder (Spicy)

  • 1 Tbsp Coriander leaves

  • 1 tsp Salt

How to Make Egg Curry

 

Serves 4-5

STEP 1

  • Mix all step 1 ingredients together. Keep aside.

STEP 2

  • Add 1 tbsp of oil and fry the eggs for a minute on low flame. After 1 minute take out the eggs and keep aside. (watch video.)

STEP 3

  • Add 2-3 tbsp of oil in a fry pan.

  • Add 1tbsp of ginger, 1 tbsp of garlic, 1 green chilli, 8-10 curry leaves.

  • Add 3 large onions thin chopped, 1 tsp of salt, 1 piece cinnamon stick, 1-2 bay leaves, 2 crushed cardamom. 

  • Maintain heat between low to medium.

  • Stir for 8-10 minutes, until onion is soft and lightly brown colour.

  • After that maintain low flame to add spices.

  • 1/2 tsp of Red chilli powder. 0.75 tsp (3/4 tsp) of Turmeric powder, 2 tsp of Kashmiri chilli powder. 0.5 tsp (1/2 tsp ) of Coriander powder.

  • Stir for 2 minutes.

  • Add 2 large tomatoes thin chopped.

  • Stir for 4-5 minutes.

  • Then add 1 tsp of tomato puree.

  • Add 1 tbsp of Coriander leaves chopped.

  • Stir for another 2 minutes.

  • Add 200ml of water.

  • Cover with a lid and cook for 2-3 minutes.

  • After 2-3 minutes add 140ml of fresh milk.

  • Alternatively coconut milk can be used ( Fresh milk recipe and coconut milk recipe have two completely different taste. Both are exceptionally good recipes.

***Serve with rice, naan, roti, puri & Dosa.
