lamb Curry

INGREDIENTS 

  • 500g -1kg Lamb/Mutton  

  • 3-4 tbsp pf Olive oil or Cooking oil

  • 1/2 tsp of Mustard seeds

  • 1 tsp of Fennel seeds

  • 2 Medium Onion

  • 7-8 tbsp of Shallot onion

  • 150ml of Coconut milk ( first stage of cooking)

  • 1 tbsp of Ginger chopped 

  • 1 tbsp Garlic chopped

  • 1 Red or Green chilli

  • 2 Bay leaves 

  • 4 Cloves

  • 2 pieces of Cinnamon stick 

  • 1 Nutmeg

  • 10-12 Curry leaves

  • 1 Tomato chopped

  • 1 tsp of Turmeric powder

  • 2 tsp of Kashmiri chilli powder (mild)

  • 4 tsp of Coriander powder 

  • 1 and 1/2 tsp of Salt (as required)

  • 1 tsp of Red chilli powder ( spicy)

HOW TO COOK LAMB / MUTTON CURRY

Step 1

1. Maintain low to medium heat.  Add 3-4 tablespoon of Olive oil/ cooking oil. Once the oil is hot, add the mustard seeds. Wait for 30 seconds to sizzle it.

 

2. Add shallot onions chopped and also add chopped onions.

3. Add 10-12 curry leaves, fresh green chilli or red chilli chopped.

4. Add garlic chopped and ginger chopped. Also add a tsp of fennel seeds, cloves, cinnamon stick, nutmeg and bay leaves.

5. Stir for 3-4 minutes.

 

6.  After 4 minutes add a chopped tomato and also add the salt.

 

7.Stir for 2 minutes. After 2 minutes, maintain low heat.

8. Add the turmeric powder, red chilli powder, coriander powder and kashmiri chilli powder( mild). Stir for 2 minutes on low flame.

 

9. After 2 minutes add the lamb/mutton chopped as shown in the video.

10. Maintain medium flame and stir for 3 minutes.

11. Add water just above the level of the meat. Also add 150ml of fresh coconut milk. Try to avoid tin coconut milk to get a better taste. How to make coconut milk from fresh grated coconut will be updated later in the blog.

12. Cover with a lid, maintain medium to high flame  and cook for 30 minutes. Stir every 15 minutes.

13.After 30 minutes, take out the lid and cook for another 15 minutes without the lid.

14. After 15 minutes, add additional 200ml of fresh coconut milk, cover with a lid and cook on medium to low flame for 10 minutes.

15. After 10 minutes turn off the heat.
