Roast

Turkey

This Roast Turkey recipe is good to serve itself or with NK's turkey sauce recipe. Both recipe have right amount of ingredients to keep enjoying your food. This turkey is juicy and soft , and you never going to leave a bite in your plate. 

INGREDIENTS

STEP 1

  • 1 tbsp Tandoori Masala

  • 1 and 1/2 tsp of Kashmiri Chilli Powder

  • 1/2 tsp of Red Chilli Powder

  • 2 tsp of Coriander Powder 

  • 1 tsp of Fennel Seeds

  • 1 tsp of Dried Chilli Flakes

  • 1 and 1/2 tsp of Salt

  • 1/2 tsp of Nutmeg Powder

  • 1 tsp of Turmeric Powder

  • 1 tsp of Garlic Paste

  • 1/2 tbsp of Ginger paste OR Crushed Ginger

  • 3 tbsp of Natural Yogurt OR Curd OR Katta Thayiru

  • 1 tbsp of Tomato puree

  • 2-3 tbsp of Coriander leaves

  • 2 tbsp of Butter

  • 1 and 1/2 tsp of Olive oil

HOW TO PREPARE

STEP1

  • All the step 1 ingredients mix well & Keep aside.

STEP 2

INGREDIENTS

  • 2-5kg Turkey 

  • 1/4 tsp of Pepper

  • Parsley dried ( as required)

  • Butter ( as required)

  • 2 tbsp Olive 0il/cooking oil

STEP 2

HOW TO PREPARE TO MARINATE

  • Make sure the turkey is fully defroasted, if you're using a frozen turkey. Take out the turkey from freezer and place in the fridge overnight.

  • Use a foil sheet to place the turkey

  • Use an oil bush and coat the turkey with 2-3 tbsp of butter.

  • Apply the prepared masala all over and inside the turkey.( watch video)

  • After applying the masala, transfer the turkey to a foil covered oven tray. Make sure the breast side of the turkey is facing up.

  • Add 2-4 tbsp of butter on the top of turkey using a spoon.

  • Sprinkle some dried parsely all over the turkey.

  • Also sprinkle the crushed pepper on the top of the turkey.

  • Add 2 tbsp of cooking oil on the tray around the turkey.

  • Marinate the turkey for 30 minutes -1 hour in a cool dry place. If you don't have sufficient time to marinate, don't worry. It is not neccessary to keep it long time marinate. After applying the masala the turkey can straight place in the oven, still you'll get better results.

  • Try to avoid placing the turkey in the fridge for marinating.

STEP 3

  • After marinating for 30 minutes-1 hour, cover the turkey like a four side covered tent, not touching the top of the turkey. For this use 4 sheets of foil rather than one single sheet.

  • First cover the top of turkey with two sheets of foil as shown in the video. 2 sheets of foil on the side, as one on each side.

STEP 4

TO THE OVEN

  • Preheat the oven for 15 minutes 

        at 170 C Fan Oven/ 375 F / GAS MARK 5

  • Place the turkey on the Middle rack of the oven or just below.

  • Cooking time :  20 minutes for every 500 g of turkey. So calculate as 20 minutes for every 500g of turkey.

  • This turkey I used for this recipe was 3.7 kg. Total cooking time was 2 Hour 30 minutes for this turkey.

  • Do not open the foil in between cooking. Check only after finishing the desired cooking time.

FROM THE OVEN

  • Remove the foil from the top. Use a skewer in the middle of the turkey to check the turkey is cooked.  

  • If the clear fluid is coming out means, the turkey is cooked well and ready to serve.

  • If any pink colour fluid means the turkey needs more cooking time and need to place back in the oven another 15-20 minutes.
